recipe: taco soup
i'm really starting to make this blog my own. and i love it. a favorite of mine growing up was taco soup. everyone makes it differently. i thought i'd share my version. side note: this is one of the most versatile recipes you will ever find and one of the easiest to "make your own" - but whatever you change, flip flop around, whatever...do NOT omit the taco seasoning or the dry ranch packet - it just does something to the recipe that is ahhhh-mazing (seriously - i can hear the angels singing every time i make a pot full)!
ingredients:
**this recipe is really easy to double, triple, whatever...i have two crock pots so i usually make two whole crock pots full and freeze leftovers...it freezes extremely well
1 lb ground turkey, ground beef, meatless burger...whatever (I prefer turkey)
1 can of corn - drained
1 can of pinto beans
1 can of kidney beans
1 can of black beans
1 can of rotel
1 can of diced tomatoes (we love tomatoes around here so I bulk it up and buy the big(ger) can
1 can of tomato sauce
1 packet of taco seasoning
1 packet of dry ranch dressing - do NOT buy the one for dips, just the regular dressing
*cheese, fritos, green onion, etc for topping after cooked - completely optional (our favorite is cheese)
directions:
**probably the easiest thing you'll ever do...seriously! you use TWO dishes. the crock pot and a frying pan to brown the meat.
1. brown the meat in a skillet. again, we prefer turkey because it is a leaner meat and doesn't create the grease that regular ground beef would.
2. combine EVERYTHING in the crock pot...including the meat you just browned
3. cook on low for 4-6 hours or high for 2-4 hours (the longer and slower you cook, the better it tastes)
now again, you will find a thousand and one renditions of this one recipe. it's amazing to have on a cold, rainy day or any day for that matter. a lot of people say it reminds them of chili but i'm tellin ya that ranch dry mix makes the whole difference..it just does something to it and i can't figure out what! but it's amazing! if you try it, share your creation!
